Beef Fajitas with Onion Marmalade and Sour Cream Dressing
Rub spices and seasonings of choice over a piece of sirloin steak [for example, ground cumin, ground coriander, cayenne, crushed garlic, small quantity olive oil to mix, salt].
Sauté steaks for 2 – 3 minutes each side or until done as you like them. Leave to rest on a plate for 10 minutes.
Sauté some capsicum in the pan juices from the meat. Add desired quantity of Martinborough Manner Onion Marmalade and a squeeze of lemon or lime juice.
Sour cream dressing – mix sour cream with crushed garlic, and grated zest from a lime or lemon, and the juice from the lemon or lime. Season to taste with salt and pepper.
To serve – slice the steaks thinly across the grain. Spread a tortilla with the dressing, top with finely cut lettuce, tomato, avocado, other vegetables to taste, steak, and onion marmalade. Roll tortillas to serve.
